Before we get into the meal plan for the week, I need to make an adjustment. These meal plans used to run from Thursday to Wednesday but I had a few complaints that it didn’t really give any lead time to buy food and prepare the meals so from now on, these plans will go from Monday to Sunday. That will give you a chance to do your shopping and any meal prep you want to do.
This week is also a fantastic week for deals on meat. Kroger has Pork Spareribs for $1.29/lb and Safeway has boneless chicken breast for $1.99/lb so I’ll definitely be grabbing at least a few racks of the ribs. It will give a reason to post my cocoa powder pork rub up on the blog next week as well.

Wednesday the 16th
Pan fried pork chops with grilled onions. Oven baked Zucchini and Squash on the side
Thursday the 17th
Friday the 18th
Pecan Encrusted Salmon with roasted asparagus and butternut squash
Saturday the 19th
Garlic Parmesan Chicken Breasts with Steamed Green Beans and carrots
Sunday the 20th
Oven Roasted Pork Ribs with Cauliflower Mash and Steamed Broccoli
