Last night I made my Garlic Herb Bacon-Wrapped Chicken and thought you all might like to try it. This is an extremely easy recipe to make and while I made it with chicken thighs this time, you can do it with any cut of chicken. Chicken breasts are usually the easiest because you will want to eat these with a knife and fork and there are no bones in those but the thighs work great also.
Ingredients
6 chicken thighs or breasts
2 Tbsp chopped basil
1 Tbsp Rosemary
1 Tbsp Sage
2 Tbsp chopped Garlic
4 oz (Half a block) of cream cheese
Salt to taste
6 strips of bacon
Instructions
Soften the cream cheese by either setting it out for about an hour or microwaving it. Combine cream cheese, herbs, garlic and salt in bowl and stir until uniform. Place chicken in large cassarole dish and spread a spoonful of cheese mixture on top of chicken. Wrap each piece of chicken in one strip of bacon. Bake on 350° for about 35 minutes or until a meat thermometer says 160°. Turn broiler on for 3 minutes or until meat thermometer says 165°.
